Papadi Chat

Very simple and easy Indian Chat. "papdi  chat" is all about assembling ingredients.
Here is the recipe for it.

You Need To Have:
12 papdis
1/2 cup curd
1/2 cup boiled potato
1/2 cup finely chopped onion
1/2 cup chopped tomato
1/4 cup chopped coriander leaves
1/2 cup fine sev
2 tsp sugar
1 tsp salt
1 tsp cumin powder
1tsp red chilly powder
2-3 tsp green chutney
2-3 tsp sweet chutney

 Method:
 Beat curd and mix sugar, salt to it.(I added cumin and red chilly powder also to it).
 Arrange papdis on serving plate as shown below.

Add some potato cubes, tomato, onion to it . pour beaten curd on it.

Garnish with sev, coriander leaves, green and sweet chutney. Sprinkle cumin and red chilly powder and serve immiditely.

Golgappa


I call it as "Butti Pani Puri".(As they sell by arranging puris in buttis). Boiled chana dal(chick peas),potato,along with other spices is what goes into golgappas.These are definitely different from pani puris. As per me, Kalanamk,Jeera powder , tamarind and amchur powder are kicker ingredients in this.
Additional element, Mint gets the freshness and green chilly gets spicy taste to pani.

You Need To Have:

For Pani:

1/2 bunch Mint Leaves
small piece of ginger
4-5 green chilies
1/2 bunch coriander leaves
1/2 concentrated Tamrind Pulp
1 tsp jeera powder
1 tsp kala namak
1 tsp Amchur powder

Divide  coriander leaves into 2 parts. use one part while grinding and another for garnishing.
Put all the ingredients in mixer jar and  grind it to fine paste.
Transfer this to clay pot or regular vessel and add required amount of water and salt.Finely chop remaining  coriander leaves and add this to pani.


If clay pot is not available, put pani in refrigerator (optional, I like chilled pani than pani at room temperature)




For Meeta:

1/2 cup Tamarind Pulp
1/4 cup powderes Jaggery
1 tsp Jeera Powder
4 cups of water

Mix all the ingredients of meeta and keep it in refrigerator.

For Stuffing:

1/2 cup Boiled potatoes
1/2 cup boiled Chick Peas
1/4 cup finely chopped onion
1/4 cup finely coriander leaves
1 green chilly finely chopped
1 tsp red chillly powder
1 tsp jeera powder
1 tsp kala namak
1 tsp amchur powder
regular salt as per taste

Mix all the ingredients and keep it aside(smash  boiled Chick Peas lightly while mixing).

Serving:
Make a hole in chat puris. Fill in small amount of above stuffing.Dip in Metta then in pani and enjoy.

Masala Puri

After browsing many recipes from different sources for masala puri I ended up in this recipe by customizing it to our taste.I might have tried around 15-16 different recipes.Some recipe had used Star anise and some other used fried gram. Some used potato and some used Red chilly powder.I was totally confused with recipe.  because of that I had stopped trying at home and used to have it at our favorite chat shop in namma bengaluru. But after moving here I had less option and has to continue my research .And finally landed at this.I have decided that I will not continue my research anymore and stick to this. he he he he:).

No no I was just kidding, I will definitely try if I come across interesting recipe and update it.

So lets start,

You Need To have:

For Ragda:

1 cup green peas/Batani
1/4 cup green gram/hesaru kalu
1 bunch of coriander leaves/Kothambari soppu
1/2 bunch fresh mint/Pudina
1/2 inch ginger/shunti
4-5 garlic/belluli
1 onion/nirulli
small piece of cinamon/chakke (Too much use can really spoil taste of masal puri)
2-3 tamarid flakes/hunse esalu
1-2 cloves/Lavanga
5-6 black papper/olle menasu
1 tsp garam masala
1 tsp jeera powder
1 tsp coriender powder
1 tsp rice flour
1 tsp wheet flour
2 tsp oil
salt to taste

For Garnishing:
10-15 chat puris
1 cup Boiled Green peas(boiled with salt)
1/2 cup fine sev
1/2 cup finely chopped onion
1/2 cup finely chopped tomato
1/4 cup finely chopped coriander
1/2 cup grated carrot
1/4 cup curd
1 tsp red chilly powder
1 tsp salt
5-6 tsp sweet chutney
5-6 tsp green chutney


Method:

Ragad:

Soak green peas and green gram for about 8-10 hours atleast.Pressure cook them by adding salt for about 4-5 whistles.
Add less water for green gram as it cooks faster comapre to green peas. Once pressure goes of, divide green peas into equal part. one part goes into ragad preparation and remaining into Masal puri Garnishing.

Fry onion with oil until onion raw smell dissappear.

Put cooked green peas, green gram,fried onion, coriander leaves, mint leaves, ginger,garlic,green chilies,cinamon,cloves,peppers,tamarind,jera powder and coriander powder in mixer jar. Grind them into smooth paste.add water if required.

Put this ground masala in thick bottomed vessel and add water to make it thiner and bring it to boil.Add garam masala to it.

Dissolve wheet flour and rice flour in water to make paste.add this to above masala(This really thickness the gravy). simmer and let it boil for 20-30 mins.Still in between to avoid lumps.

This gravy has to be on flame all the time until its served. so if gravy thicknes after certain time, then add water and get right consistency again.

Serving:


Take 5-6 chat puris and crush them on serving plate as shown.

.Add few boiled green peas on them.

 
Spread prepared ragad on this.(around 1 ful cup is required).


Granish with Onion,tomato,carrot and coriander. End with 1 tsp each of curd, sweet chutney, green chutney. finely sprinkle red chilly powder and salt. serve immiditely.

Crispy Chat Puri's

Ingredients:

1 cup pani puri semilion/ Chiroti Rave
1/4cup All Purpose flour / Maida
1 tsp salt
Pinch of baking powder
oil (1 tsp for dough+ for deep frying)


Method:

Take Semilion in mixing bowl. Add water and knead the dough for 5 mins.Then add maida and knead for another 2-3 mins.
Finally add 1 tsp of oil and knead.(Kneading should be continued until pressing on dough bounses back).Adding oil at end is really important. else puris will not really puffs up and will waste all the effort.
Transfer the dough into cover and keep it aside(dough should not get air contact).let it rest for 20-25 mins.


Take handful of dough and rool it to thin sheet (need not be round)with help of rooling pin.Sprinkle little maida while rolling.(or even oil can be used).
Take more dough and have big chapathi rolled,by which many puris can be prepared in single iteration.

With help of small round cokie cutter or any round shaped sharp edge object cut the rolled sheet into small chat puris as shown below.

Take out cut puris and collect the edges to continue with remaining dough.

Take a really deep and thick bottomed vessel for deep frying.Deep fry all the cut puris( sprinkle oil all around the puris with help of spoon inorder to puris to puff up). Don't over fry them.
Spread them on tissue paper to remove excess oil.Don't worry if puris have little moisture content and they are not very crisp.Next step will fix that.

Differentiate flat puri and puff up puris. Flat puris can be used in masla puri and puff up puris in golgapps and pani puri.


Transfer fried chat puris to microwave try.Bake them for 20 min under low heat(300 degree should be sufficient).

Once they cool down ,transfer them into airtight container for later use.

Bhelpuri


Me and H are really missing Indian chat items after moving here.We are really carving for them.

We have to travel miles to taste chats and make our-self happy.Last time when we had been to NY, he started searching for chat center with Google maps in hand. I really felt bad about that and decided to prepare all chat items at home and make him happy.

I came across so many recipes for different chats.I filtered them according to our taste and according to methods I used to observe from chatwal's of namma benagaluru.

So here is the recipe for my first attempt in one of great Indian chat.

Bhelpuri

You Need To Have:

4 Cups Puffed Rice/Kadalepuri
1 tsp Jeera Powder/jeerige pudi
1/2 tsp Red Chili Powder/accha kharada pudi
Salt to taste
4-5 Papdi/Chat Puris(if you have any leftovers)
1/2 Cup Sev
4 tsp Sweet Chutney
4 tsp Green Chutney
1/2 Cup Smashed Boiled Potatoes
1/2 cup finely chopped Onion
1/2 cup finely chopped tomato
1/2 cup finely chopped Coriander Leaves




Method:
Take puffed rice in large mixing bowl.Add potato,tomato,onion,crushed papdi(or chat puri).
Sprinkle sweet and green chutney followed by jeera powder, chilly powder and salt.

Quickly mix them together and garnish with sev and finely chopped coriander.
Serve immediately.
